We’ll start your career as a chef at our chefs academy
If you are interested in becoming a chef, you will not go wrong with the chefs academy course offered at the Prue Leith Academy. During the 18-month diploma course you will learn about all disciplines of the catering industry, which include:
- Kitchen organisation
- Handling and use of knives
- Hygiene
- The Mise-en-Place concept
- Kitchen terminology and French culinary terms
- Menu planning
- Entremetier
- Saucier and rotisseur
- Poissonier
- Farinaceous
- Garde-manger
- Patisserie
- Pan African, international and vegetarian cuisine
At Prue Leith we follow the French style of cooking, but that doesn’t mean you won’t get a well-rounded and balanced education. Some of the other aspects we cover in the course include:
- Finance and management
- Herb gardens
- Front of house
- Wine
- Construction of their curriculum vitae and interview techniques.
You will have the opportunity to start working in the awarded Prue Leith Restaurant as soon as two weeks after staring with the course. Not only can students work at the restaurant, they can also work at Prue Leith Catering which offers customers the luxury of fine dining cuisine at a venue of their choice. Students are exposed to off-site catering activities in a real life working environment.
Performance will be rewarded
If you perform well during your training in the classes you can look forward to certain awards. Should you excel in pasty you will automatically receive a diploma in pastry from the Prue Leith Academy.
How the chefs academy work
The course runs over a period of 18 months and is divided in three semesters of six months each. During the first semester students are mainly in the demonstration kitchen and lectures where they learn the basics and theory of classical cooking.
During the second semester students can look forward to getting hands-on experience in the Prue Leith restaurant where they will prepare meals for a paying public.
