A Taste Of Kenya

Ingredients:

  • 1 cup of ndengu
  • 1 red onion
  • 1 green chilli
  • ½ can of coconut milk
  • 4 cloves of garlic
  • 1 gram whole ginger
  • Salt & pepper to taste
  • Vegetable oil
  • Dhania
  • Tomato paste

Method:

  • Soak the ndengu in cold water for an hour and a half
  • Boil the ndengu until soft. Set aside.
  • Julienne red onion
  • Brunoise the green chillies, garlic and ginger
  • Fry the red onion in a bit of vegetable oil
  • Add the garlic, ginger and green chillies. Fry until golden brown and season with black pepper
  • Add tomato paste to the mixture and cook for 3 minutes
  • Add coconut milk and simmer for 5 minutes then add the cooked ndengu
  • Boil for 5-10 minutes and remove from heat
  • Add the chopped dhania. Serve with rice of chapatti
