Ndengu (green grams) with coconut milk
March 18th, 2010Ingredients:
- 1 cup of ndengu
- 1 red onion
- 1 green chilli
- ½ can of coconut milk
- 4 cloves of garlic
- 1 gram whole ginger
- Salt & pepper to taste
- Vegetable oil
- Dhania
- Tomato paste
Method:
- Soak the ndengu in cold water for an hour and a half
- Boil the ndengu until soft. Set aside.
- Julienne red onion
- Brunoise the green chillies, garlic and ginger
- Fry the red onion in a bit of vegetable oil
- Add the garlic, ginger and green chillies. Fry until golden brown and season with black pepper
- Add tomato paste to the mixture and cook for 3 minutes
- Add coconut milk and simmer for 5 minutes then add the cooked ndengu
- Boil for 5-10 minutes and remove from heat
- Add the chopped dhania. Serve with rice of chapatti
