Gourmet Breakfasts and Bunches | Waffles

2 eggs
170 g | 6 oz plain flour
a pinch of salt
1 tablespoon baking powder
30 g | 1 oz caster sugar
290 ml | 2 oz butter, melted
a few drops of vanilla essence
extra melted butter
To Serve
butter
honey, maple syrup or jam
- Separate eggs.
- Sift the flour, salt, baking powder and sugar together into a large bowl. Makes a well in the centre and put in the egg yolks.
- Stir the yolks, gradually drawing in the flour from the edges and adding the milk and melted butter until you have a thin batter. Add the vanilla essence.
- Grease a waffle iron and heat it.
- Whisk the egg whites until stiff but not dry and fold into the batter with a large metal spoon.
- Add a little melted butter to the hot waffle iron, pour in about 4 tablespoons of the mixture, close and cook for about 1 minute on each side.
- Serve hot with butter and honey, maple syrup or jam.
NOTE: The first waffle always sticks to the iron and should be discarded.
