It is amazing how we run in circles from one year to the next, trying to do what is fashionable and trendy and yes we do fall off the boat every now and then.

For me it is keeping it simple, honest, less is more, don’t play with food, respect the food, understand where the food comes from and how it got to you.

Be honest about the food. Know the basics and practice makes perfect. Everyday one must do better than yesterday, part of what we do is about repetition, yes it can be a bit boring. But to be truly good, in fact great, is doing the same thing everyday consistently to the same standard if not better than the previous. Never below never worse. It is the hardest thing for any youngster to understand.

You have not achieved or mastered anything if you have only done it once.
