NO INGREDIENTS A
1 Granulated sugar 100g
2 Water 120g
3 Lemon Juice 2ml / 15g
4 Strawberries, washed and hulled 200g
5 Glucose 22g

Method

  • In a saucepan combine the sugar, water and lemon juice; bring the mixture to a boil.
  • Remove the pan from the heat and let the syrup cool completely
  • Puree the strawberries
  • Add 59ml of the syrup.
  • Taste the mixture and if necessary add more syrup.
  • Pour sorbet mixture into chosen Silikomart mould, freeze until icicles form
  • Insert lollipop sticks into the centre of the semi - frozen sorbet
  • Place back in the freezer to freeze completely.
  • Serve ice cold

Any berry or soft fruit can be substituted for strawberries.
