1 Sorbet syrup 285g
2 Lemon juice 225ml / 257g
3 Water 195ml
     
4 Sorbet Syrup
5 Sugar 680kg
6 Water 480ml
7 Glucose syrup 114g

Method

  • Stir all of the ingredients for the sorbet together until well blended.
  • Pour sorbet mixture into chosen Silikomart mould, freeze until icicles form.
  • Insert lollipop sticks into the centre of the semi - frozen sorbet.
  • Place back in the freezer to freeze completely.
  • Serve ice cold.

Any citrus fruit juice can be substituted for the lemon juice.
