Class of July 2009 finishes pastry Dem on a high
After five weeks of pastry lectures, equaling a total 60 hours of demonstrations and practical experience the class of July 2009 set up a “high tea” buffet to showcase what they had learnt.
The class was given eleven cake recipes, ten biscuit recipes and nine petit four recipes to execute. Insight and assistance was given where required and techniques were demonstrated, but after two days of hard work, the class set up a buffet to be proud of with very little assistance.
It is always with pride that I observe what our first commis students are capable of after only 60 hours of pastry lectures. Considering a good percentage of this semesters intake was quite “green” in culinary terms, this buffet was an even greater achievement. Mastering of these skills must continue throughout the course at Prue Leith for a student to be competent in the kitchens of hotels and restaurants. They will take there pastry skills to the next level in their second semester when they are placed in the pastry departement at Prue Leith`s restaurant.
