    This course is aimed at perfecting the ultimate dinner party showstopper – the Beef Wellington. Join us for a hands-on step-by-step class to prepare this loved classical.

  • Course Content

    • Flavour parings, perfect accompaniments, sauces and variations on the classic dish.
    • Fabrication of beef fillet; trimming, sealing and seasoning.
    • Laminated doughs: guidelines and techniques for home- made puff pastry.
    • Understanding the importance of heat application at each step of preparation.
    • Preparation of puff pastry, mushroom duxelle, chicken liver pâté, savoury crêpes.
    • Demonstration and preparation of classic Beef Wellington with traditional sides served for dinner or lunch.

  • Dress Code

    You will be working in a professional kitchen, so wear comfortable shoes and keep jewelry and make-up to a minimum and hair tied back. An apron will be preferable.
