    Coffee Chocolate and nuts go together like… Gateau Opera! A classic cake with origins dating back as
    far as 1955 when Cyriaque Gavillon, a pastry Chet at Dallayou created a masterpiece out of desire to have the perfect balance of every ingredient in a cake in one bite! His final piece of layered artistry reminded his wife of the Paris Opera House, and so a classic was born: L’Opera.

  • Course Content

    • Theory and techniques behind creating a multilayered classic.
    • Demonstration and preparation of classic French buttercream.
    • Demonstration and preparation of almond jaconde.
    • Demonstration and preparation of Chocolate ganache and glaze.
    • Layering and creating the 6 layered classic “Gateau Opera”.
    • Portioning and decorating, create an entrements.

  • Dress Code

    You will be working in a professional kitchen, so wear comfortable shoes and keep jewelry and make-up to a minimum and hair tied back. An apron will be preferable.
