Prue Leith Chefs Academy is regarded as one of the finest training institutions in the country. This academy was established in 1997 and has over the years gone from strength to strength. We regularly produce graduates that are sought after by chefs and kitchens the world over. The comprehensive training that our students get ensures that they are more than equipped to deal with the high pressure that is prevalent in the cooking world. We train them in all aspects of food preparation and presentation as well as giving them a sound knowledge of the financial implications of running a restaurant of culinary establishment.
The Prue Leith Chefs School offers three different diplomas. The Grande Diploma in Culinary Studies and Wine is an intensive, full time 18 month course that prepares students for a career as a full time chef. This course offers classic French training in hot, cold and pastry kitchens as well as offering specialised courses in pan African cuisine, spice route studies , finance and kitchen management. Wine studies are conducted by well-known wine master Clive Torr. The Diploma in Culinary studies is a 12 month part time course and includes training in hot, cold and pastry kitchens but there are no wine studies included in this course. Practical experience on this course is gained by preparing lunches and dinners for 12 guests at the chefs table in The Chefs Studio. The Diploma in Patisserie is a 4 month full time course that prepares students thoroughly for a career as a pastry chef.
