    • How to break down a lamb carcass and fabricate the primary cuts
    • French trimming lamb rack
    • Deboning lamb leg, shoulder and neck
    • How to prepare whole beef fillet for roasting
    • Basic meat cooking techniques

  • Dress Code

    You will be working in a professional kitchen, so bring an apron/chef’s jacket, comfortable shoes and keep jewellery and make-up to a minimum and hair tied back.
