• Course Overview

    Plant-based diets celebrate the diversity and health benefits of the plant world, and in this course we will explore the possibilities of vegetables, fruit, grains, pulses, nuts and seeds to the fullest extent. You will discover different ingredients, learn about their nutrition density and learn to make your own textured vegetable proteins and to extract flavour and umami that brings deliciousness to every meal. Our plant based course is completely vegan. 

    * Prue Leith Culinary Institute and the staff at our culinary school are not health or nutrition practitioners and do not promote specific diets, but rather offer delicious recipes for people who have been advised to follow certain diets. Where we do refer to specific health guidelines or benefits, we follow the recommendations of the World Health Organization.

  • Course Content

    • What is Plant-based? Vs. Vegan, vegetarian etc.
    • Careful! Not all plant-based food is automatically healthy.
    • How to create a nutritious, balanced plant-based meal.
    • Learn to make tofu and seitan vegetable proteins.
    • Replacing animal products in plant-based diets.
    • Learn to extract umami from plants.
    • Make plant-based starters, main courses and desserts.

  • Dress Code

    You will be working in a professional kitchen, so wear comfortable shoes and keep jewellery and make-up to a minimum, and your hair tied back.
