Plant-based diets celebrate the diversity and health benefits of the plant world, and in this course we will explore the possibilities of vegetables, fruit, grains, pulses, nuts and seeds to the fullest extent. You will discover different ingredients, learn about their nutrition density and learn to make your own textured vegetable proteins and to extract flavour and umami that brings deliciousness to every meal. Our plant based course is completely vegan.
* Prue Leith Culinary Institute and the staff at our culinary school are not health or nutrition practitioners and do not promote specific diets, but rather offer delicious recipes for people who have been advised to follow certain diets. Where we do refer to specific health guidelines or benefits, we follow the recommendations of the World Health Organization.
