    One step up from our Basic Bread course, Sourdough Secrets will teach you the art of working with wild yeasts and slow fermentation. You will learn how to make and care for sourdough starters, as well as using them in a variety of breads.

    • Course Outline

      • Introduction to sourdough bread.
      • The art and science of starter dough and pre-ferments. 
      • Understanding different types of flours and hydration levels.
      • Shaping, finishing and baking a variety of sourdough breads.

    • Dress Code

      You will be working in a professional kitchen, so bring an apron/chef’s jacket, comfortable shoes and keep jewellery and make-up to a minimum and hair tied back.
