We offer three different diploma courses all of which are written in conjunction with the City& Guilds IVQ in Food Preparation and Culinary arts, these diplomas are as follows:

  • The Grande Diploma in Culinary Studies and Wine – this is an intensive full time course that takes 18 months. The course offers classic French Training in hot, cold and pastry kitchens as well as focusing on specialist   subjects that include Pan African cuisine, Spice Route Studies, finance and kitchen management.
  • Diploma In Culinary Studies – this diploma is delivered part time at Prue Leith Chefs Studio. The course offers classic French training in hot, cold and pastry kitchens and specialist subjects including finance and kitchen management. There are no wine studies attached to this course and the practical experience is gained by preparing lunches and dinners for 12 guests at the chefs table, which is in the Chef’s Studio.
  • Diploma in Patisserie – this is a full time course that prepares you for an entry level position as a pastry chef. The course offers classic French Training and modern techniques.
