The pastry chef courses cover both the theoretical and practical sides of pastry, including a number of recipes and important information material. The various techniques covered in the pastry module include bread and cake making, custards and sauces, meringues, chocolate, soufflés and gateaux’s. Only the finest array of ingredients is provided to the students for them to experiment with, so that they may become accustomed to high quality flavours and textures. The other various modules included in the curriculum include hot and cold kitchen, Pan African cuisine and the spice trade route, to name a few.
Students are also given the chance to put their newly acquired baking and cooking skills to the test in the academy’s fully equipped demonstration kitchen which is also our onsite restaurant, Prue Leith’s. Voted as one of the top restaurants in the country, it is our students who take the reigns in the kitchen with an aim to impress the diners. We often receive bookings well in advance from keen individuals, both locally and abroad, looking to secure themselves a table and fine dining experience at the restaurant.
