• Course Overview

    Plants have formed an essential part of our diet since the early existence of mankind, yet their role seems to have diminished over time in the Western diet. This course will re-introduce you to the abundance of mother earth, revisiting old favourites and getting to know new varieties.

    We will not only give you the skills to turn vegetables into much loved accompaniments, but most importantly show you that these simple ingredients can be elevated to be the star of the show.

  • Course Outline

    • The health benefits of adding plants to your plates.
    • How to choose fresh vegetables and shop according to season.
    • Basic vegetable preparation and knife skills.
    • Healthy cooking methods for vegetables.
    • Flavour pairings for vegetables.
    • Vegetables in a supporting act – side dishes and snacks.
    • Vegetables as the star of your show.
    • Demonstration and preparation of five different vegetable recipes to be served as lunch or dinner.

  • Dress Code

    You will be working in a professional kitchen, so bring an apron/chef’s jacket, comfortable shoes and keep jewellery and make-up to a minimum and hair tied back.
