Our chef courses cover both the theoretical and practical aspects of cooking. Students are given only the finest ingredients from around the world to experiment with such as Iranian caviar, Italian truffles, Belgian chocolate and French frog’s legs, to name a few. We believe that in order to prepare our students for a career in a five star kitchen, we need to familiarise them with five star tastes and textures. Our cooking curriculum is based on the classical French method and also covers an in-depth finance module which teaches our students the importance of effective stock management, menu costings and how to calculate profit percentages. We are the only school in the country where this module is delivered by Chartered Accountants.
At the academy, students are given the opportunity to practise their newly acquired cooking skills in our fully equipped demonstration which is also our onsite restaurant Prue Leith’s. Voted as one of the top hundred restaurants in the country, it is our students who in actual fact, and under the watchful eyes of our expert chefs, prepare the meals for our guests.
