Unlike all the other cooking courses in Gauteng, the academy’s high quality curriculum train students in a wide variety of culinary areas allowing them to enter into their career as chef with a wealth of theoretical knowledge and practical experience. We believe that in order to prepare our students for a career in a five star restaurant, that we need to provide them with five star ingredients. Students are given top class tastes and textures to experiment with such as French frog’s legs, Iranian caviar, Belgian chocolate and Italian truffles, to name a few. Based on the classic French method, our curriculum trains our students in hot and cold foods, pastries and much more and even includes an in-depth finance module. This teaches our students the importance of effective stock management, menu costings and how to calculate profit percentages. We are also the only school in the country where this module is delivered by Chartered Accountants.
Full time students are given the opportunity to practise their newly acquired cooking skills in our fully equipped demonstration which is also our onsite restaurant Prue Leith’s. Voted as one of the top 100 restaurants in the country, it is our students who, under the watchful eyes of our expert chefs, prepare the dishes for our guests.
