Our full time students curriculum is mostly based on the classic French method of hot and cold foods and pastries, as well as modules including Pan African cuisine, spices and a Cape Wine Ambassadors course. Students also cover a finance and kitchen management module which demonstrates the important factors of running a professional working kitchen. We are the only school in the country where this module is delivered directly from professional Chartered Accountants who teach our students how to correctly do things such as calculate profit percentages, maintain an effective stock management and how to put together menu costings.
The range of part time and evening cooking classes offered by the academy consist of a number of different options from bread making and chocolate decorating to pastry and baking. One of the evening cooking classes we offer is our dinner party menus cooking lessons. Attendees are given the option of learning to cook either a vegetarian, fish, beef or chicken menu, each consisting of a three course meal and a canapé. These classes also include a complimentary glass of wine with each course.
