The Prue Leith Chef’s Academy has long been rated as being at the top of the list of cooking schools in South Africa. The chef diploma course here runs for a full eighteen months, starting in January and July of each year. Numbers are limited to thirty students, so there’s always a scramble for who gets a place here. This cooking school’s diploma is probably the most sought-after qualification in the South African catering establishment, and possession of it ensures the holder of a good position on graduation. Cooking schools can be judged by the placements of their former students, and graduates of Prue Leith’s have been found working in such kitchens as the Roux Brothers, Gordon Ramsay and Jamie Oliver.
