Culinary Classes

Our high quality full time curriculum teaches our students both the practical and theoretical aspects of working in a professional kitchen. They are given only the finest ingredients to experiment with from French frog’s legs to Belgian chocolates, in order to ensure that they have a full understanding of five star tastes and textures. Our cooking curriculum is based on the classical French method and also covers an in-depth finance module which trains students how to effectively manage stock, put together menu costings and calculate profit percentages. Full time students are given the opportunity to put their newly acquired cooking skills to the test in our fully equipped demonstration kitchen which is also home to our onsite restaurant Prue Leith’s.

Our part time students on the other hand will be able to practice their skills in the Prue Leith Chefs Studio where they will have to impress 12 guests at the chefs table. All of the academy’s culinary classes are delivered by professional lecturers who are experts in their individual fields.
