Our culinary courses range from a well rounded full time curriculum to a number of part time, evening and day cooking classes.
Our full time curriculum is based on the classical French method and covers both the practical and theoretical sides of working in a professional kitchen. Students are supplied with top ingredients from around the world from French frog’s legs to Italian truffles as we believe that in order to prepare students for a career in a top kitchen, we need to familiarise them with five star ingredients. All of our culinary courses are lectured by professionals who are all experts in their field. Our full time course also includes a finance module, delivered to our students directly by Chartered Accountants, demonstrating the importance of effective stock management, menu costings and the calculation of profit percentages.
Full time students then put their skills to the test in our fully equipped demonstration kitchen and onsite restaurant, Prue Leith’s, which was also voted as one of the top restaurants in South Africa. Part time students are given the opportunity to gain practical experience in our Chefs Studio where they are required to cook for 12 guests at the chefs table.
