Our full time curriculum is based on the classical French method style of cooking in order to give our students a truly fine dining education and thorough knowledge of food. Our students are provided with only the highest quality of local and international ingredients to experiment with as we believe that in order to prepare them for a career in a five star restaurant, we need to familiarise them with five star textures and tastes. At the Prue Leith Chefs Academy we believe that having a good understanding of the financial running’s of a professional working kitchen is also an integral part of being a fine dining chef. This is why we include a finance module in our curriculum which covers all the aspects of stock management, menu costings and profit percentages, and is delivered directly to our students by Chartered Accountants themselves. As part of this module students are also required to team up and put together a business plan, after which many have gone on to successfully implement themselves.
