Fine Dining Training

Prue Leith Chef’s Academy is a chef school that specializes in giving their students fine dining training of international standard. Some of their graduates have had the honor of working in famous kitchens like Jamie Oliver, Gordon Ramsay and the Roux brothers on completion of their comprehensive fine dining training.

The mark of an outstanding fine dining training institute is the practical experience given to the students. At Prue Leith the fine dining training is not limited to the kitchen – though this area is thoroughly covered during training. One of the top 100 restaurants in South Africa and the top 10 in Gauteng are located on the premises of the chef school and this serves as a training restaurant for the students. Within two weeks of their arrival on campus the students start to cook for the public. Students do duty in all the areas of the restaurant. From the kitchen where they create menus, learn about costing, cooking and presentation to waiting on tables, front of house and serving wine. This is truly a comprehensive fine dining training programme.

Prue Leith’s fine dining training programme is THETA accredited. In fact, it surpasses THETA requirements. This means the qualification will be recognized throughout South Africa. One often sees advertisements for vacant posts stating “Prue Leith Graduates only.”

Internships form part of the fine dining training programme. In the second and third semesters of training students are placed in top restaurants in South Africa, Ireland, England and Dubai to round-off their fine dining training. Often students are offered permanent employment by these establishments.
