At the Prue Leith Chefs Academy we follow in the footsteps of the world’s most celebrated haute cuisine chefs, and as a haute cuisine catering academy provide our students with the skills and knowledge that prepares them for the demands of the culinary world. Our extensive in-house curriculum is based on the classical French method, and as our newest group of students enter our academy, they are positioned as the 1st Commis, or junior cooks, within the kitchen. During this period they will receive their foundational training before putting it into practice as 2nd Commis. Under the guidance of the chef de partie they will master all areas of the kitchen at our onsite restaurant Leith’s, rated as one of the top 100 in South Africa.
As a haute cuisine catering academy it is beneficial that our learners achieve a national framework qualification that will allow easier travel work experience. It is therefore required that they write the City&Guilds IVQ in Food Preparation and Culinary Arts (7065) and Patisserie (7065) exams alongside our examinations. To extend their practical work our 3rd Commis are placed at only the top restaurants and hotels in South Africa, including Mount Nelson, The Forum, Terrior, Sel et Poivre, Grand Provence, Hatford House, and many more.
