When a baby is born, its first seven years of life are known as its formative years, the years during which the foundation of developing characters, personalities, traits, and abilities are laid down. One cannot dispute the veracity of the late Mr. Ray’s sentiments about the importance of building a strong base, applicable to his recipe for happiness as well as to our cookery, baking, and other courses on offer at Prue Leith Chefs Academy in Centurion. Meet Your Kitchen Cooking Course
The Meet Your Kitchen short cooking course helps novice cooks gain a sound foundation in the art and science of cooking – in a professional kitchen. Confident cooks who enrol for this programme can enhance, improve, and polish their skills in the kitchen, while learning professional tricks of the trade and helpful tips directly under the guidance of culinary professionals. Over the course of twelve Tuesday evening sessions, each lasting three and a half hours, successful learners obtain a Prue Leith Certificate in Foundational Cooking. The course commences with a thorough introduction to the kitchen, before moving on to the following content, starting with the less complex, more basic professional processes first:
- Knife skills and veggie preparations;
- Sandwiches, canapes, salads, and cold sauces;
- Rice, grains, and potatoes;
- Pastas and sauces;
- Poultry fabrication and cooking;
- Meat fabrication and cooking;
- Fish and seafood preparation and cooking;
- Basic (foundational) baking;
- Basic bread baking;
- Tarts and pastry; and
- Plating and presentation.
