Here, at Prue Leith Culinary Institute, we have an unquenchable passion for food. We offer hands-on training and take every student on a journey filled with culinary delight and executive-level chef training. Prue Leith Culinary Institute offers a variety of course offerings to suit all schedules. Whether you’re looking for a full-time accreditation, a part-time course, or a short course, we have plenty of options abound. If you have ever considered going to chef school, two of our popular full-time accreditations include:
- ALMA Professional Chef of Italian Cuisine: This exceptional 19-month full-time course is in partnership with one of Italy’s top chef schools, ALMA. This course gives students the opportunity to work and train abroad and offers those enrolled an in-depth understanding of Italian culture and food. The accreditation covers all the basics of running a successful kitchen (such as kitchen hygiene, cooking methods and techniques, and theories of food production) and more subjects with a focus on Italy, like Italian wine, Italian raw materials, Italian pastry, and more. Students will enjoy studying at the ALMA institute for two months, where they will learn about Italian cuisine, and then do a five-month internship at a top Italian establishment to gain practical knowledge and experience. - Occupational Certificate: Chef: This full-time, three-year national course offers aspiring chefs core foundational skills and practical knowledge, equipping them with extensive knowledge to run a successful kitchen. In the first year, you will learn everything about running a kitchen and the hospitality industry at large; in the second year, you’ll delve into food theory, food production, and practical elements of preparing a range of dishes, and, in the final year, you will explore global cuisine, gastronomical theories for gourmet cooking, and advanced menu planning. This course offers students a Level 5 Occupational Certificate: Chef as well as WSET Level 1 and 2 wine and spirits courses and City & Guild diplomas. Read here for more information on our school.
