Professional Chef’s Training

Since opening our doors in 1997 we have gone from strength to strength, combining passion, excellence, creativity, expertise, leading edge and tradition into a successful recipe that has allowed some of our young chefs to work in the kitchens of renowned chefs like Gordon Ramsey, Jamie Oliver and the Roux Brothers.

At the Prue Leith Chefs Academy standard is nothing short of perfection as our well-rounded and comprehensive professional chef’s training courses were developed in response to the high demands and standards of the industry. Our full-time Grande Diploma welcomes new students during the months of January and July where they begin their professional career with foundational training in the classical French method as 1st Commis. In addition to our student’s training in the hot, cold and pastry kitchens, we have added specialist subjects that includes Pan African cuisine, spice route studies, finance and kitchen management, as well as the Cape Wine Ambassadors course.

The professional chef’s training ensues with our students moving up the ladder to 2nd Commis. During this semester they will put into practice all that they have learned and gain in-house restaurant experience at one of South Africa’s top 100 restaurants, Prue Leith’s. The student chefs work in rotation to ensure that they perfect their culinary skills in the various departments of the restaurant before honing in on their skills as 3rd Commis at their various placements at South Africa’s leading hotels and restaurants. By the time their 18 months at the Prue Leith Chefs Academy has come to an end they will have gained all the skills, knowledge, experience and accreditations that will ensure that our young chefs can enter the culinary world with confidence.
