Our students are offered an inclusive curriculum, covering both the practical and theoretical side of working in a professional kitchen. Some of our students have even gone on to work in celebrity kitchens around the world under chefs like Gordon Ramsay, Jamie Oliver and the Roux brothers.
Our full time curriculum is based on the classical French method style of cooking in order to give our students a truly fine dining education and thorough knowledge of food. Students at our school of cooking are provided with only the highest quality of local and international ingredients to experiment with. We believe that in order to prepare them for a career in a five star restaurant, we need to familiarise them with five star textures and tastes. Students are also trained in the financial running’s of a professional working kitchen. Our finance module covers all the aspects of stock management, menu costings and profit percentages, and is delivered directly to our students by Chartered Accountants themselves. As part of this module students are also required to team up and put together a business plan after which many of our students have gone on to successfully implement themselves.
To keep our curriculum inline with industry standards we are constantly monitoring and improving our course material. As a result our students remain highly sought after in the industry with ’Prue Leith graduates only’ job adverts making a regular appearance in the classifieds.
