It is all about an amalgamation of theoretical and practical elements and real-world experience. At Prue Leith Culinary Institute, we offer students a blended learning approach where they learn the theory and acquire the skills in our kitchen and then showcase these skills at one of our partners’ celebrated establishments, including top restaurants, hotels, and catering venues. This gives students a feel for a real-world kitchen and the working dynamics that they’ll experience after they’ve qualified. 

Students will also experience fine dining first-hand at our on-campus restaurant. Here they’ll get a taste of the fast-paced, spirited world of fine dining and create a portfolio of evidence of their work. Fine dining chefs need to refine many other skills and techniques before starting their careers in top establishments. Students will also spend a great deal of time perfecting gastronomical flavours and learning all about global cuisine from Africa, the Americas, Europe, Asia, and the Middle East to broaden their culinary repertoire. 

As a qualified fine dining chef, your job will require a mastery of these tasks:

  • Creating and planning delicious recipes while considering varying flavour profiles and ingredients 
  • Determining portions and serving size 
  • Ordering the necessary supplies 
  • Training other chefs in recipe development, menu preparation, and presentation 
  • Ensuring that all food leaving the kitchen meets pre-determined standards 
  • Adhering to all regulations and sanitation guidelines 
  • Managing teams, including sous chefs, junior chefs, kitchen assistants, and kitchen porters
