Chef Classes

Our full time Grande Diploma in Culinary Studies and Wine is a fully inclusive course. The various chef classes included in this diploma specifically cover all the aspects of working in a professional kitchen, embracing the classical French method. All students are provided with five star ingredients to experiment with from French frog’s legs to foie gras and Italian truffles. Curriculum’s covered during the first semester include hot and cold kitchens, pastry, service and finance. The in depth finance module is delivered to our students directly by Chartered Accountants, and demonstrates the importance of effective stock management, menu costings and the calculation of profit percentages. The second semester takes on Pan African cuisine, the spice route, outdoor cooking and advanced cooking classes, while the third and final semester is set aside for external practice and experience only.

Full time students are also able to put their skills to the test in our fully equipped demonstration kitchen and onsite restaurant, Prue Leith’s. Voted as one of the top restaurants in South Africa, it is left up to our students to wow the diners under the watchful eyes of our on hand expert chefs.
