Cooking Diploma

The cooking diploma curriculum at the Prue Leith Chefs Academy is based on the classical French methods of training in hot, cold and pastry kitchens. The course also covers Pan African cuisine, spice route studies, Cape wines as well as a finance and kitchen management module. Students are also given internationally sourced five star ingredients to experiment with. This ensures that one day when they go on to work in five star restaurants, that they are familiar with the tastes and textures of high quality ingredients.

As well as the theoretical side of the course, the award wining onsite restaurant, Prue Leith’s offers the perfect environment for students to practice their cooking skills in a working environment. Under the watchful eyes of their mentoring chefs, the students are put to the test in the kitchen with a restaurant full of customers to please. Voted as one of the top 100 restaurants in the country, we often receive table reservations well in advance from customers both living locally and abroad.
