Our academy’s curriculum is based on the classical French method giving students both an understanding and experience in a wide range of culinary areas. During their culinary diploma course at the academy, students are provided with only the finest five star ingredients to experiment with which helps them to become familiar with high quality tastes and textures. Students are then given the opportunity to practice their newly acquired cooking skills in our working kitchen which also makes up our onsite training restaurant, Prue Leiths. Here it is our students who prepare food for the diners under the watchful eyes of our professional chefs.
As well as the hands-on approach to cooking, students are also taught to manage the financial side of the kitchen. Our finance module is designed to help our students enter into their careers with confidence when it comes to effectively managing stock levels, calculating profit percentages and putting together menu costings. We are the only chefs training institution in South Africa where this module is delivered by Chartered Accountants and have gone on to see many successful business ventures develop because of it.
