Pastry Course

The pastry course itself includes nine modules, they are Bread Baking, Cake Making, Custards and Sauces, Meringues and Fruit, Classical Pastry and Biscuits, Chocolate and Petit Fours, Soufflés, Gelatine based products and Bavarian Cream and last but not least, Gateaux’s. Each individual module consists of both information material and delicious recipes, teaching students the importance of precision when it comes to making the perfect pastries. Only the finest ingredients is used to ensure that students have the opportunity to experiment with five star tastes and textures, which is another way we prepare them for a career in a top restaurant.

Students are then given the opportunity to put their newly acquired cooking skills to the test in our onsite restaurant, Prue Leith’s. Voted as one of the top restaurants in the country, it comes as no surprise that our students have gone on to work in celebrity kitchens around the world as well as represented South Africa in the Culinary Olympics and even taken home the gold at the World Gourmand Cookbook Awards in Beijing.
