Our fully intensive course Grande Diploma in Culinary Studies and Wine is conducted over a period of 18 months while our part time Diploma is extended over 12 months. Our patisserie course on the other hand only takes three months to complete. Both our full time and part time diplomas cover both the theoretical and practical aspects of working in a professional restaurant. The various modules covered in the courses include hot and cold kitchens, the spice route, service and much more. Our finance module specifically is delivered to our students by a qualified Chartered Accountant and teaches students the importance of effective stock management and menu costings.
This teaches our students the importance of effective stock management, accurate profit percentages and menu costings. As part of this module students are also required to team up and put together a business plan, after which many have gone on to successfully implement themselves after graduating.
