Pastry Training

Those with a fondness for making pastries might wish to take their passion for patisserie to professional heights. Professional pastry training courses equip students with the theoretical and practical knowledge to begin a career as a pastry chef. A pastry chef, often known as a pâtissier in executive circles, is a station chef within commercial kitchens. Pastry chefs make many exciting and delectable dishes, including tarts, bread, desserts, pies, custards, chocolate and candies. These chefs are also highly creative, and a large part entails high-level refinement and design to ensure the pastries look picture-perfect.

So, what exactly do aspiring pastry chefs learn when enrolling in a pastry training qualification? Let’s explore our various course offerings in greater detail.

What to Expect from Pastry Training Courses at Prue Leith Culinary Institute

Whether you want to brush up on your pastry-making skills and dazzle the family or embark on a full-blown career, we have several options for those wishing to enhance their skills.

Full-time pastry training offerings: Prue Leith Culinary Institute offers students two options when it comes to full-time pastry courses, namely an 18-month Professional Patisserie course and a six-month course. Our 18-month course, in particular, will equip students with the knowledge and skills to enter the pastry world and build their careers. The first year includes a five-month practical placement where students will get to work in a professional kitchen and enhance their repertoire. While the 18-month offering is more extensive, both options cover an array of pastry-related subjects, such as:

• Sugar craft (a certificate course)

• Plated desserts

• Advanced breads

• Breakfast patisseries

• Advanced cakes and showpieces

• High tea and buffets

• Chocolate and confectionary

• Menu planning

We also offer an 18-month part-time Professional Patisserie qualification for those unable to commit to a full-time course. Students will glean all the knowledge necessary to begin a professional career without having to commit to full-time study.

Short course offerings: We also run a range of exciting short courses for those wishing to brush up on their culinary knowledge and skills. Those who love pastries can explore our one-day Basic Baking course, our five-day Advanced Cakes course, our one-day Art of Tarts course, or one of our Festive Baking and Decorating courses which are focused on Easter and Christmas.

We also offer a host of other full-time, part-time, and short courses. Browse our course offerings and find the course that inspires you. Whether you’re a beginner looking to learn the basics or a seasoned chef, we present courses to benefit you and enhance your skill set.
