Full-time pastry training offerings: Prue Leith Culinary Institute offers students two options when it comes to full-time pastry courses, namely an 18-month Professional Patisserie course and a six-month course. Our 18-month course, in particular, will equip students with the knowledge and skills to enter the pastry world and build their careers. The first year includes a five-month practical placement where students will get to work in a professional kitchen and enhance their repertoire. While the 18-month offering is more extensive, both options cover an array of pastry-related subjects, such as:
• Sugar craft (a certificate course)
• Plated desserts
• Advanced breads
• Breakfast patisseries
• Advanced cakes and showpieces
• High tea and buffets
• Chocolate and confectionary
• Menu planning
We also offer an 18-month part-time Professional Patisserie qualification for those unable to commit to a full-time course. Students will glean all the knowledge necessary to begin a professional career without having to commit to full-time study.
Short course offerings: We also run a range of exciting short courses for those wishing to brush up on their culinary knowledge and skills.
