Before they enter the working kitchens, students are trained in the basics of the culinary arts. For instance, in their first year, they will learn the basics of the theory and practice of preparing and finishing dishes, stocks, soups, sauces, rice, grains, meat, poultry, seafood, charcuterie, preserving, pastries, and hot and cold desserts.
This training takes place on Prue Leith’s campus, which includes several venues for various elements of the training. There are two main kitchens, a library, and lecture halls.
