Our full time Grande Diploma in Culinary Studies and Wine is a fully inclusive course and consists of both theoretical and practical training. The various culinary modules included in this diploma specifically cover all the general aspects of working in a professional kitchen and incorporate the classical French method. All students are provided with five star ingredients to experiment with as well as become familiar with 5 star tastes and textures. The curriculum’s covered during our students first semester include hot and cold kitchens, pastry, service and finance. The in-depth finance module is delivered to our students directly by a Chartered Accountant and demonstrates the importance of effective stock management, menu costings and the calculation of profit percentages. The second semester takes a look at the traditional Pan African cuisine and the spice route, while the third and final semester is set aside for external experience.
Our full time students are also given the opportunity to put their skills to the test in our fully equipped demonstration kitchen which is also our onsite restaurant, Prue Leith’s. With a reputation for being a top restaurant in Pretoria, it is our students who do all the cooking under the watchful eyes of our on hand expert chefs.
