Since the cooking school was established in 1997, the Academy has gone on to train many aspiring chefs into world class connoisseurs who have gone on to work in celebrity kitchens around the world.
The curriculum at the cooking school also covers a wide variety of areas. From hot and cold kitchen menus to Cape wines and Pan African cuisine, students are also taught the importance of good service and all the financial aspects of running a restaurant. The finance module specifically teaches students the significance of things such as menu costings and stock management, and is also delivered directly to the students by a professional Chartered Accountant. Another important factor in this module is that students are required to put together a business plan in teams, after which many have gone on to successfully implement.
When it comes to the practical side of the Academy’s curriculum, students are provided with high quality local and international ingredients. From foie gras and French frog’s legs to Belgian couverture chocolate and Italian truffles, students are able to experiment with various flavours and develop an acquired taste for five star dishes.
