Full Time or Part-Time
Whether your dream is to open your own bakery, work as a dessert chef on a cruise ship or strut your stuff at a five-star restaurant, our courses can get you qualified. Just be ready to commit to a six- or eighteen-month period of intensive training. Pastries are not for the faint of heart, but if you’re serious about advancing in this speciality, then these courses will be worth your while. See below, the pastry chef training options available at Prue Leith Chefs Academy:
- Professional Patisserie part- or full-time over 18 months.
- Professional Patisserie full-time over six months.
The longer of the two options is for individuals who want to start their careers in the culinary industry. The main difference between part- and full-time is that you gain your Occupation Certificate: Cook after the first year in the full-time course. After this year, you proceed to complete a City & Guilds Patisserie Diploma. In the other, you work towards receiving your City & Guilds Patisserie Diploma. You do get credits towards an Occupational Certificate: Chef when completing the course. You don’t need ample qualifications to join the programme as we start from the very beginning.
Specialist Training
If you’re ready to specialise your culinary talents in pastries, you can opt for the shorter, six-month programme. You’ll need to have experience as a qualified chef to participate in this intensive pastry chef training, but upon completion, you will be equipped with a skill set that you can apply with confidence. This patisserie speciality course offers you subjects, including menu design, sugar craft, management of the kitchen, chocolates and confectionary, as well as high teas, and more. You’ll get to study at a leading culinary college with a lecturing team of industry specialists.

With a strong focus on both practical training and theory studies, you’ll refine your patisserie skills upon completion of this course.
Short Pastry Chef Training Courses to Add to your CV
Apart from the longer programmes for chefs, we also offer many short pastry chef training courses, which you can use to boost your CV. If you have skills that need polishing you can do so in as little as 24 hours. For instance, the art of making macaroons is a skill that many food enthusiasts wish to master, a milestone that you can easily reach in our one-day Masterclass. These shorter courses are not only for pastry chefs but also others who want to add baking skills to their learning profiles.
